@shutupkevin316 I love DDD. it’s a great show. one of my faves. Not a big fan of Guy. He never cooks. He’s like always eating or hosting a game show, but rarely do I see him cook.

Beef Jerky is surprisingly easy to do as long as you have the right ingredients and a smoker. If you have Princess Auto in your country, you can buy an in-home smoker for one or two hundred bucks. The vaccuum tumblers use low-pressure atmosphere to increase the amount of ‘juice’ the meat absorbs. We didnt tenderize it when I did it though.

Our jerky seasoning had curing salt in it, but it’s not mandatory, it just helps make it last longer.

you can also buy a home-sized meat slicer, also from princess auto, but theres other places that probably carry them too, for about a hundred bucks. Here in Canada I saw one for $99, and I plan to buy it. It’s just like the butcher-shop one, but small enough to fit on your kitchen counter, with a fully adjustable blade. If you have one, just go to your butcher and buy a whole top-sirloin (or outside round if you’re cheap) and cut it up at home.

You can buy them in a vaccuum sealed bag.

With a meat slicer and a smoker, you can make all the jerky you want right at home. If you dont have a vacuum tumbler (and honestly, who doesnt? I couldn’t live without my vacuum tumbler. It was one of the first things I bought for my kitchen. Yep, everybody needs a vacuum tumbler!… where would you even buy one, anyway?) you can whip up the mix and then use one of those great big double-ziplock freezer bags. Put that in the fridge over night, full of sliced sirloin and sauce, then smoke it!

The same store where you bought the smokehouse should also sell the wood-chip disks you need for it. Princess Auto does, big boxes of them, and if I saw right, there’s different kinds, like hickory and maple, though I could be wrong.

Now you CAN get a smoker that doesnt use chip disks, and you can also make your own smoker at home with the right materials, depending on where you live and what the fire hazard laws are there.

I know a guy who made a smoker out of poplar trunks and a tarp.
