    Straight chicken broth would also make a nice sauce. Because it’s so neutral in flavour, I would probably add some other flavour as well. Sage and mushrooms together is out of this world, and sage and chicken is also a classic pairing. So I’d replace the wine with chicken stock, then hit it with some fresh sage a couple of minutes before serving. Thyme would be nice too, as would rosemary.

    well, yes, marsala usually calls for chicken stock. however, without the wine, it simply cannot be called chicken marsala, as marsala wine is the namesake of the dish. i do like the herbs, though.

    Chef Jason - I am making homemade fetucinne noodles to go with the chicken marsala and the recipe I’m using calls for half teaspoon salt, do I use table salt or Kosher salt?

    You can use either salt. If you have both, go with the kosher.

    I was watching another Marsala chicken recipe and the chef said to only use imported Italian marsala wine. I got some Perlino marsala wine from Capital Drinks and followed your instruction and my end result was a more rich an darker dish!

    Try using proper marsala wine from Italy next time it gives a better colour.

    There are many, many ways to make a marsala chicken dish. I try and keep it simple. You can obvioulsy make a higher end recipe with better wine. I just do not know too many people who want to spend a lot of money on a good imported wine. Thanks for you comment.
