    Additional help:

    1. Season a non-teflon egg pan with lecithin (Vegeline). Use clarified butter for cooking the eggs.

    2. Yolks at the bottom of the pan makes a safe flip, but professional presentation requires the yolks in the center.

    *Immediately* after placing eggs in hot pan:

    a. Use fingertips to break individual membranes of the egg whites between yolks.
    b. Use fingertips to paddle eggs away from edges.

    3. Practice his flip as shown with a bread slice

    Teflon in pans supposedly can leech into the food as it is cooking and teflon is a carcinogen.
